Chewy Chocolate Cardamom Cookies with Sandy Ho

Today, with Guest Food Editor Sandy Ho, we’re making these delicious chewy cookies!

 

 

 

Here’s the list of ingredients! 

 

 

Start by grinding the cardamom - I like to use green cardamom - it gives such a beautiful floral flavour and smell. And works so well with the chocolate!

  

 

Measure your dry ingredients.

 

 

Mix well.

  

 

Measure your butter and eggs.

  

 

Brown the butter over medium-high heat. Watching carefully as the butter starts to foam you’ll see the white foam slowly turn a dark caramel - you’ll smell the nuttiness of the butter - remove from heat immediately and leave to cool.

 

  

Combine the eggs, vanilla and butter.

Add to dry ingredients.

  

 

Form into a dough.

 

  

Place the forked dough in the middle of a sheet of parchment. Using the parchment roll the dough into a log about 2 inches in diameter. Then wrap in cling film and place in freezer for at least 1 hour.

 

  

Slice the cookie dough into 1/2 inch rounds.

 

  

Place onto a lined baking sheet, sprinkle a little flakey salt on each cookie and bake for 12-14 minutes at 350F.
